Zuper Zucchini Banana Muffins….. Without the Zucchini ! [Gluten Free]


Makes 12 and these really are amazing breakfast muffins! 

This a lazy recipe. I love lazy, quick, convienant, easy recipes that take me under 45 min! So if your looking for vegan, all natural, organic, etc turn back now! Although, these babies are not that unhealthy and pack 200 calories per muffin if you use the regular muffin pan and fill each cup. 

Oh did a mention Fibre? Yeah they will help keep you regular šŸ˜‰ 

Fibre is excellent for Weightloss as well – I liked this recipe because one muffin kept me full for 3-4 hours. 

Okie so step one, find this mix: 


I get mine from Winners/ Marshalls because they are always A few dollars cheaper and if they don’t have it than Sobeys should. 

Step Two grab some flax or chia, I love ground flax, I just use Redmill because it cooks the best.


Preheat to 350 degrees

  • Zucchini Bread GF Mix
  • 4 Ripe Bananas
  • 2 Eggs 
  • 1/3 Cup Oil 
  • 1/2 Cup Chocolate Chips
  • 2 TBSP Flax Ground 
  1. Add Flax with 2 TBSP of water and let expand a bit 
  2. Add the wet ingredients first into a big bowl and then the dry with chocolate chips
  3. Dump the flax mixture in
  4. Stir, baby stir! 
  5. Dump your mixture into you pan and bake for 35 min until cooked mostly through! 

I say mostly through because it’s pretty hard to get a full cook through with Gluten Free Muffins without burning them. 

PLUS it keeps them moist and yummy!

BEST [Gluten Free] Soup to Remedy a Cold

  
I rarely ever get sick! Somehow I find myself with a SUMMER cold!! Yuck and the heat does not help!! Here is a soup that will boost your body’s immune system and tastes amazing! Plus only 200 cal per cup!! 

Ingridients 

2L Organic Gluten Free Chicken Broth ( I use Imagine)

6 Cloves Garlic

2 tbsp Shredded Fresh Ginger 

1 tbsp olive oil

2 cups fresh chopped carrots 

1 package Gluten Free chicken noodle soup by Frontier 

1 cup Corn

1 cup Peas

1 chopped scallion 

2 cups Catelli Gluten Free Penne Noodles 

100g Precooked Chicken Breast 

Spice how you like (just remember some spices contain gluten)  – I like to use 3 tbsp of Litehouse Salad Blend

  
Throw it all into a pot and bring to a boil for 5 min on high and then simmer covered on medium for 10-15 min.

Gluten Free Lettuce WrapsĀ 

  

I f*cking love lettuce wraps, I crave them a lot but you have to go to a restaurant and spend money to get them. Plus if you are like me and are allergic to more food than not then it’s better to just make your own food porn! 

Ingredients 

  1. Chicken breast 
  2. Head of lettuce 
  3. Garlic
  4. Seasonings 
  5. Chipotle Chili Pepper 
  6. Pine nuts (baking aisle)
  7. Green apple 
  8. Lemon 
  9. VH Orange Ginger Sauce 
  10. VH Spicey Thai Chili Sauce 

If you don’t have all those ingredients its probably fine, the most important are the chicken, the lettuce and the sauces. 

Cook your chicken in some butter or oil with garlic and seasonings 

  
Nom.

Ok now on medium heat roast your pine nuts with a tad of Chipolte Chili Pepper for 1-2 min – DO NOT go overboard with this one because it’s Spicey as F*ck. 

  

  
While that’s cooking get your lettuce washed and peeled, your green apple chopped or julienne’d, and your lemon halved. 

  
Once chicken is cooked, combine in a heat safe bowl with all the juices and a add sauces (1/2 cup each).

   
 

Yummy! 

Now assemble your wrap and don’t forget to squirt some lemony goodness on top!

Protein Peanut Butter Balls

I rarely use measuring, I kind of feel out my recipes and it works for me! Here is a good snack for when you need a high protein push!

– Instant Oats (Quaker Maple & Brown Sugar is my Favorite!)

– Rice Krispies

– Hemp Seeds

– Peanut Butter

– Honey or Agave Nectar if you have it!

– Chocolate Chips (Only add a few tablespoons)

 

Mash it all together and make balls smooshing the mixture in your hand, put in a container and keep in the fridge!

 

Roughly 100 Calories a ball!
