[Gluten Free] Turkey Pot Pie 

Gluten Free Turkey Pot Pie! Yummy way of getting rid of leftovers from thanksgiving weekend! 

Pre heat Oven to 375 degrees. 

Pastry Recipe: 
– 2 1/2 cups GF Flour (tapioca, cornstarch, potato, rice flour blend with xanthan gum) 

– 1 tsp salt 

– 1 tsp sugar 

– 1 1/2 cups butter or margarine 

– 2 cold eggs

– 1 tbsp vinegar 

– 6 tbsp cold water

Apple-Raspberry Crisp [gluten free]

Mmmmmmm! Nothing better in Spring than some Homemade Apple Crisp with Vanilla Ice Cream!! 

I hate wasting food! So I’ve become pretty resourceful when is comes to “recycling” food!    

  

After all, chances are if you made it, hubby is going to eat it! Don’t worry I guarantee this one tastes great! 

Preheat your oven to 400 degrees Fahrenheit.  

The crisp is just steel cut oats, butter and brown sugar – I never measure but I would estimate:

2 Cups Oats 

1 Cup Butter or Margarine 

3/4 Cup Brown Sugar 

Use half the crisp batter for the bottom of the pie and save the other half for the top. 

  
  

The filling is any old, soft apples you have and some Freezer or Fresh  berries – I used raspberries! Throw them in the 

Add in 1 Cup of Butter and simmer on medium heat. 

Turn off the burner and stir in 1 tablespoon of vanilla or Vanilla Extract. 

Dump the filling on top the crisp base and sprinkle the rest of the crisp batter on top.

Ok now throw that puppy in the oven for 20-30 min – check on it to make sure it doesn’t burn! 

  
Enjoy with Vanilla Ice Cream!!!

The BEST, 4 ingredient, [Gluten Free], Peanut Butter Cookies

 
Yummy! These awesome little cookies are only 75 calories a piece and take 20 minutes total to whip up and bake!  

Plus they are Gluten Free!!! 

  
Ingredients 

  • 1 Cup Peanut Butter
  • 1 Cup Sugar 
  • 1 large egg 
  • 1 tsp vanilla 

Combine in a bowl and stir until blended! 

  
Spoon onto baking sheet (about 1 tbsp) amount

  
Bake at 350 degrees for 10 minutes!

The BEST [Gluten Free] Chocolate Cheesecake

Gluten Free cheesecake can be challenging but I found one that I really love! Took me about 15-20 min to whip up and throw in the oven! You want to let it chill completely before eating it, really let the flavors set!

Preheat Oven to 350 Degrees

Crust

  • 2 Pack Gluten-Free KinniToos Chocolate Sandwich Creme Cookies
  • 1/2 Cup or so of Butter

Filling

  • 3 packs of Light Cream Cheese (24 Ounces)
  • 1 Cup White Sugar
  • 1/2 Cup Cocoa Powder
  • 3 Large Eggs
  • 1/2 Tsp Vanilla Extract
  • 1 Cup Sour Cream
  1. Add the butter and cookies into the food processor and blend well, press mixture into cake pan(s)
  2. Throw Crust in the oven for 10 min
  3. Mix the Filling ingredients together and blend until smooth (I used the food processor)
  4. Pour mixture into cake pan(s)
  5. Bake for 50 Min – Or until you can poke a knife in the middle and have it come out clean
  6. Enjoy!
